GRAINS/SPECIALTY MALTS

The following grains have been used in the recipes we offer in our recipe kits. We will give a description of each grain and a general idea of their recommended usage, so that you may see why we use them in our recipes as well as when you might use them in your own beers. All of the grains come to you fresh and whole and may need cracking or crushing as individual recipes require.

Black Patent Malt (#500): Like the name says, it is a very dark malt and will impart a rich dark color to your beers. It is traditionally added to dark ales like stouts and porters. Its' noticeable caramelized flavor is a key ingredient in many fine beers.

Chocolate Malt (#501): Full of flavor and color. Most often added to stouts and porters but can enhance brown ales and Scottish ales when added in smaller quantities as we have done with our own Essentials’ Recipe Kit, Hectors Nectar.

Light Crystal Malt (#502): Crystal Malt is the most frequently used specialty grain around ours and many others brewpots. The light variety is used to add sweetness, a touch of light brown color and a caramel flavor.

Amber Crystal Malt (#503): Same sweetness and caramel flavor as the light version but with an amber coloring.

Dark Crystal Malt (#504): Here is where you will find sweetness, the strongest caramel flavor and a deep dark reddish color when you add this crystal malt to your beer. This is a popular trend in many commercial beers on the market today.

Dextrin(Cara-pils) (#505): No flavor or color is achieved from the use of this grain, but you will get noticeable results in improving head retention in your beers when steeping along with your other grains.

Roasted Barley (#506): Bring on the stouts and porters but let’s not over do it with this one. You will get a deep red color and coffee like taste by using only small amounts(1/4lb. per 5gal.).

Wheat Malt (#507): Generally used in wheat beers, it may also be used as a natural heading compound in other beers.
